2014 - My good friends Pete and Karen remodeled their backyard by installing a beautiful patio, pool, slick water jet contraption and a dining table that has a built-in fire pit. As part of the remodel Pete talked Karen into installing a wood-burning pizza oven. As I've spent the last 8 years perfecting pizza, he thought I might be just the guy for the job.
This was a first for me, as such I woefully underestimated the time and effort involved in its construction. Most every step required several days curing time before the next step could be completed. But it eventually got done and the results really are eye-catching.
Pete is able to heat it to 1,000 degrees which cooks a pizza in about 90 seconds. Because of the excellent insulation qualities of the oven it maintains heat amazingly well. A full 24 hours after the last of the wood has burned it measures 400 degrees. This makes it perfect for breads and any number of dutch oven recipes during that time. Next phase in the project is to perform a pool and pizza-bar party "field test!"
